Baking Ingredient Weights

A cup of cake flour is 114 g and a cup of packed brown sugar is 220 g, so a recipe converted with a single generic factor is wrong by almost double. Each page here uses the published weight for one specific ingredient, states it plainly, and shows what packing does to it — because the difference between a spooned and a scooped cup of flour is larger than most of the substitutions bakers worry about.
